The Collection
The Stingless Bee Honey Collection
For over 3,000 years, communities across Mesoamerica have shared a quiet, sacred relationship with stingless bees — tending them, learning from them, and treasuring the rare honey they produce. In Honduras, that tradition lives on.
Known locally as Jimerito honey, this small-batch honey comes from the native stingless bee Tetragonisca angustula, harvested from wild log hives deep in Honduran forests. It tastes nothing like the honey most people know — naturally tangy, lighter in texture, and carrying centuries of cultural meaning in every drop.
Forestal MT's Stingless Bee Honey Collection protects this heritage. Every jar is traceable, responsibly sourced, and rooted in the same forest ecosystems and community practices that have kept this tradition alive for millennia.
Ko'olel Kaab — "Royal Lady"
A Heritage Older Than History
In Mayan cosmology, stingless bees were far more than insects. They were guardians of knowledge and symbols of harmony. The Jimerito bee, called ko'olel kaab — "royal lady" — in the Mayan language, held ceremonial, household, and communal significance.
Today, Forestal MT partners with indigenous and rural beekeepers who maintain traditional log hives — hollowed tree trunks — within biodiverse forest landscapes. These methods preserve both the bees' natural behavior and the integrity of the honey itself.

Harvest Selection
Careful selection of honey chambers from wild log hives of Tetragonisca angustula, choosing only mature pots ready for harvest.
Gentle Extraction
Local harvesters use traditional methods to remove the honey while protecting the colony and ensuring its continued health.
Simple Straining
The honey is lightly strained to remove larger pieces of wax, preserving its natural enzymes and living character.
Natural Resting
The honey is allowed to rest undisturbed, keeping its natural texture, flavor complexity, and biological activity intact.
Sealed Storage
Stored in sealed containers — traditionally gourds or glass jars — to protect its living character from moisture and fermentation.
