Culinary Preparation (Cooked Greens)

Thoroughly wash Amaranth greens and remove tough lower stems, keeping only tender leaves and upper stems. Bring a large pot of salted water to a rolling boil. Add Amaranth greens and boil for 2-5 minutes until tender but still bright green. Drain immediately in a colander. Serve warm, drizzled with extra virgin olive oil, fresh lemon juice, and sea salt.

Sautéed Preparation

After blanching (as above), heat olive oil in a pan over medium heat. Add chopped onion and garlic, sauté until fragrant. Add blanched Amaranth greens, stir-fry for 2-3 minutes. Season with salt, pepper, and a squeeze of lemon. Serve warm as a nutritious side dish.

In Soups & Stews

Add fresh Amaranth greens directly to soups, stews, or curries during the last 5-10 minutes of cooking. The greens will wilt and add nutritious depth to your dish.
